So, after a little research, I'll answer my own question, and then pose a few more.
To begin, the swap is 100% feasible, here's a list of parts you must have:
1. Manual steering rack
2. Inner tie rod ends (outer ends are the same, only needs new inners; pinch nut can be left out in favor of threadlock)
3. Correct rod boots (different boots are required for manual rack than for power rack)
4. Steering rod joint shaft for manual steering (u-joint connector between steering column and rack, manual is longer than power)
5. New mounting U-bolts and rubber bushings (they're cheap, rust free, and seriously, this car's over 20 years old just get them)
As for the new question(s):
1. How much clearance under the car will I need to get this job done?
2. What all do I have to dismantle to remove the old unit and install the new?
3. Does anybody happen to have a Mk. II Jetta parts car with manual steering? I'd like to purchase your linkage.
